1. Preheat oven to 350°F (177°C). Place the oven rack in the center position.
2. In a food processor fitted with the blade, add the flour, baking soda, baking powder, and freeze-dried mango. Process until the freeze-dried mango is ground to a fine powder. Set aside.

3. Dice dried mango into small pieces and set aside.
4. In a stand mixer fitted with the paddle attachment (or using a hand mixer), cream the softened butter with the brown and granulated sugars on medium speed for 2–3 minutes, until light and well combined. Scrape down the bowl as needed.

5. Add the vanilla, egg, and salt. Mix until fully incorporated, scraping the bowl once or twice.

6. Add the freeze-dried mango–flour mixture and mix on low speed until the dough holds together and only a few streaks of flour remain. Finish incorporating any remaining dry bits with a spatula.


7. Fold the diced dried mango pieces into the dough with a spatula.
8. Portion dough using a 1½ Tablespoon cookie scoop (about a medium #40 scoop). Space scoops about 2 inches apart on a parchment-lined rimmed baking sheet; bake one sheet at a time.
9. Bake for 10–12 minutes until edges are golden and centers are set. For perfectly round cookies, immediately after removing the sheet from the oven gently place a round cookie cutter or the rim of a glass around each cookie and nudge the edges inward to smooth the shape while the cookies are still hot and pliable.
10. Cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
Tip: If you prefer a slightly shinier top, roll each dough scoop into a smooth ball before baking. For a matte, textured top, leave them as scooped.
