We all love themed fruit and vegetable trays. A fellow Produce Mom and a fan of my Facebook page asked for ideas for her son’s Teenage Mutant Ninja Turtle birthday party. Who doesn’t love the heroes in a half shell? This tray was a lot of fun to create and is an easy, healthy centerpiece for any kid-friendly celebration.

Ninja Turtle Party Tray
Ingredients
- Broccoli florets (enough to fill most of a round tray)
- Baby carrots (for the bandana)
- Black olives (sliced, for eyes and smile)
- Turnip or jicama slices (cut into small football shapes for eye whites)
Instructions
- Start with a clean, round serving tray or platter. Pat the surface dry and, if you like, line it with parchment paper for easy cleanup.
- Arrange the broccoli florets to cover roughly the bottom three-quarters of the circle, creating the main green face and head shape. Use larger florets toward the center and smaller pieces to fill gaps and shape the edges.
- Form the bandana by laying baby carrots in a horizontal band across the tray above the broccoli. Fill the band completely, leaving only a small top portion uncovered to form the top of the head.
- Fill the top section above the carrot band with additional broccoli to shape the forehead and crown, blending the green area into the bandana for a friendly turtle silhouette.
- Add facial details: place two small turnip or jicama football-shaped slices where the eyes should be. Top each with a thin slice of black olive for pupils. Use sliced olives or a small curved olive piece to create a smiling mouth.
- Make final adjustments for symmetry and color contrast. If desired, tuck a few extra carrot sticks along the edge of the tray to create a decorative border or to suggest the ends of the bandana.
- Serve with kid-friendly dips on the side such as hummus, ranch, or Greek yogurt dip. Place the dips in small bowls around the platter or in the center if the tray allows space.

Tips and Variations
Choose fresh, bright green broccoli for the best color. If broccoli florets are small, use more to achieve a dense, even look. Substitute sugar snap peas or green bell pepper strips for added texture and contrast if you want to vary the greens.
If you prefer a softer texture for younger children, lightly steam the broccoli so it’s tender but still holds shape. For added flavor, toss the florets in a tiny bit of olive oil and lemon zest before arranging.
To make other Ninja Turtles, change the bandana color: red or blue bell pepper strips, or colored fruit leather cut into strips, can create different characters. Use the same basic layout and switch small details to personalize the tray for any turtle or theme.
Serving and Storage
Assemble the tray shortly before guests arrive to keep vegetables crisp and appetizing. If you need to prepare in advance, store the cut vegetables separately in airtight containers or resealable bags with a damp paper towel to maintain moisture. Assemble the design up to 1–2 hours before serving and keep refrigerated until ready to display.
