I love browsing the sale section at Williams-Sonoma after the holidays — it gets me away from my desk and into the fresh air. On one of those visits I picked up a jar of Vanilla Wafer Butter. One jar quickly turned into a few, and before I knew it I was sneaking spoonfuls in the quiet corners of my home.
 
To make my habit look more respectable, I pressed the mixture into mini molds, topped each with a layer of dark chocolate, and served them as proper little desserts.

Ingredients

  

  • 180 grams graham cracker 2 cups
  • 180 grams vanilla wafer butter 1 cup
  • 98 grams confectioner’s sugar ¾ cup
  • 3 grams vanilla bean paste 1 tsp
  • 270 grams dark chocolate 1 ½ cups

Method

 

  1. Pulse the graham crackers in a food processor until they reach a fine crumb consistency.
  2. Add the vanilla wafer butter, confectioner’s sugar and vanilla bean paste. Pulse until the mixture is smooth and well combined.
  3. Press the mixture into tartlette or mini tart molds and set aside while you melt the chocolate.
  4. Melt the dark chocolate over a double boiler, stirring constantly. When fully melted, remove from heat and transfer to an easy-pour container (a measuring cup works well). You can use a microwave in short bursts, but watch carefully to avoid burning.
  5. Pour the melted chocolate over each filled mold, then refrigerate until set, about two hours or overnight for best results.
