Easy, four-ingredient, No-Bake Vanilla Wafer Butter Cups, topped with a generous layer of rich, dark chocolate.

Put aside the healthy spreads for a moment and treat yourself to No-Bake Vanilla Wafer Butter Cups — a simple, four-ingredient delight finished with a glossy dark chocolate topping.
These no-bake cups are quick to assemble and perfect for when you want an indulgent treat without turning on the oven. I actually made a batch a few weeks ago and even shared a process shot on Instagram because they came together so easily.
Summer was on my mind when I made them, but honestly they’re perfect any time you crave something sweet and fuss-free.

I love browsing the sale section at Williams-Sonoma after the holidays — it gets me away from my desk and into the fresh air. On one of those visits I picked up a jar of Vanilla Wafer Butter. One jar quickly turned into a few, and before I knew it I was sneaking spoonfuls in the quiet corners of my home.
To make my habit look more respectable, I pressed the mixture into mini molds, topped each with a layer of dark chocolate, and served them as proper little desserts.

I brought most of these to work to prove I could share — and to convince a friend I wasn’t entirely obsessed. I even made a tart pan version to take in, so there was plenty to go around.
If I’m honest, I still dream about being covered in the stuff, but making these little cups felt like a civilized way to enjoy that guilty pleasure.

Look at them — practically calling your name. Make a batch, grab a spoon, and enjoy! Everything you need is listed below.

Method
Ingredients
- 180 grams graham cracker 2 cups
- 180 grams vanilla wafer butter 1 cup
- 98 grams confectioner’s sugar ¾ cup
- 3 grams vanilla bean paste 1 tsp
- 270 grams dark chocolate 1 ½ cups
Method
-
Pulse the graham crackers in a food processor until they reach a fine crumb consistency.
-
Add the vanilla wafer butter, confectioner’s sugar and vanilla bean paste. Pulse until the mixture is smooth and well combined.
-
Press the mixture into tartlette or mini tart molds and set aside while you melt the chocolate.
-
Melt the dark chocolate over a double boiler, stirring constantly. When fully melted, remove from heat and transfer to an easy-pour container (a measuring cup works well). You can use a microwave in short bursts, but watch carefully to avoid burning.
-
Pour the melted chocolate over each filled mold, then refrigerate until set, about two hours or overnight for best results.
