I wanted the flavor but a lighter format, so I made pinwheels using whole grain tortillas and reduced-fat cream cheese instead of mayo. The cranberry spread is made by combining softened cream cheese with cranberry salsa for a creamy, slightly sweet-and-spicy topping that complements the turkey perfectly.

Ingredients

  • 1 (8 oz) block reduced-fat cream cheese, softened
  • 1 cup cranberry salsa

For the Pinwheels:

  • 2 large whole grain tortillas
  • 12 slices smoked turkey breast
  • 24 fresh spinach leaves, divided

Instructions

  1. Make the cranberry spread: combine the softened cream cheese with 1 cup cranberry salsa and mix until smooth. Cover and refrigerate until ready to use.
  2. Assemble the pinwheels: divide the cream cheese mixture between the two tortillas and spread evenly to the edges.
  3. Place 10–12 spinach leaves on each tortilla, pressing gently so they adhere to the spread.
  4. Layer about 6 turkey slices on each tortilla, then roll tightly. Wrap each roll in plastic wrap to hold its shape.
  5. Refrigerate for 1–2 hours so the tortillas set, then slice the rolls into 1/2-inch rounds. Expect about 20–22 pinwheels total.
