Silky Chickpea Hummus Without Tahini — Quick & Flavorful Recipe

Creamy Tahini-Free Hummus – a simple, delicious hummus made without tahini. A small trick gives it a fluffy, creamy texture while keeping it lower in fat.

This is our favorite hummus. It disappears fast whenever I serve it — toddlers aside — and it’s great spread on spelt tortillas or used as a sandwich or wrap filling with fresh veggies and cheese.

This version is tailored to be tahini-free, lower in fat, and light on cumin. I use a couple of simple techniques to make it exceptionally smooth and airy.

Ingredients and substitutions

  • Garlic – I use one large clove for a mild garlic flavor; increase if you like it stronger.
  • Chickpeas – canned or cooked; see notes on using homemade or Instant Pot chickpeas if you prefer.
  • Lemon juice and lemon zest – both brighten the flavor.
  • Salt and black pepper to taste.
  • Olive oil – helps with richness; 1 1/2–2 tablespoons works well.
  • Reserved bean juice (aquafaba) from the chickpea can — the key to creamy fluffiness.
  • Cumin – a small amount adds warmth; adjust to taste.

Recipe steps

Place the garlic in a food processor and pulse until minced.

Add the chickpeas, lemon juice, lemon zest, salt, pepper, olive oil, cumin, and start with about two tablespoons of the reserved bean juice. Process, then add another 1/2–1 tablespoon of bean juice if needed to reach your desired consistency.

Process the mixture for about 3–4 minutes. The extended processing time helps the hummus become smooth and fluffy — don’t rush this step.

Tips and tricks

Reserve the liquid from the chickpea can (aquafaba) before rinsing. When blended with the other ingredients it creates a light, whipped texture similar to tahini-based hummus.

Process for several minutes to develop that creamy, airy texture — this makes a big difference.

If you like, adjust cumin and lemon to suit your taste. Some people prefer more lemon or a bit more olive oil for richness; both are fine.

Recipe notes

For an even fresher hummus, cook your own chickpeas (Instant Pot or stovetop) and reserve some of the cooking liquid instead of canned aquafaba.

Olive oil amounts can vary: the video demonstration uses 1 1/2 tablespoons while the recipe card suggests 2 tablespoons. Either is fine — increase to 2 tablespoons if you prefer a slightly richer texture.

This recipe is family-tested and often preferred to tahini-based versions for its lightness and flavor.

Ingredients

  • 1 large garlic clove
  • 1 15-ounce can chickpeas, drained and rinsed (reserve the bean juice)
  • 4 teaspoons lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon sea salt
  • 2 Tablespoons olive oil
  • 2–3 Tablespoons reserved bean juice
  • Few grinds black pepper
  • 1/4 teaspoon cumin

Instructions

  1. Pulse the garlic in a food processor until minced.
  2. Add the remaining ingredients and process 4–5 minutes until smooth and creamy, adding more bean juice or a pinch more cumin if desired.
  3. Serve and enjoy.
