Make Space on Your Holiday Baking List

Move over banana bread — the holidays call for warm, spicy flavors. If you think gingerbread only comes as cookies, try this moist gingerbread loaf. It delivers the same cozy spices in a cake-like form that’s simple to make and perfect for gifting.

This loaf is gluten-free, made with almond and oat flours for a tender crumb and pleasant texture. It’s sweetened with blackstrap molasses and maple syrup, giving it a rich, caramel-like depth that pairs beautifully with ginger and cinnamon. Pumpkin puree keeps the bread moist without a lot of oil; applesauce is an easy swap if you prefer.

  • Oat flour
  • Arrowroot flour
  • Cinnamon, ground ginger, and nutmeg (or your favorite holiday spice blend)

  • Pumpkin puree (or applesauce)

  • Blackstrap molasses (for a richer, less processed molasses flavor)
  • Maple syrup
  • Coconut oil (melted)

White Chocolate Mascarpone Topping

Mascarpone is an Italian cream cheese with a silky, spreadable texture. Whipped with melted white chocolate, it becomes light, airy, and just sweet enough to complement the spiced loaf without overwhelming it. For a lower-sugar option, choose sugar-free white chocolate or omit the topping altogether.

How to Make Gluten Free Gingerbread

Step 1: In a bowl, whisk together the pumpkin puree, blackstrap molasses, eggs, melted coconut oil, and maple syrup until smooth.

Step 2: In a separate bowl combine the oat flour, almond flour, arrowroot flour, cinnamon, ground ginger, nutmeg, baking powder, baking soda, and sea salt. Mix well so the spices are evenly distributed.

Step 1 shows whisking the eggs and molasses, and step 2 shows combining the dry ingredients.

Step 3: Add the dry ingredients to the wet ingredients and stir just until everything is combined. Avoid overmixing to keep the loaf tender.

Step 4: Line a standard loaf pan with parchment or grease it lightly with coconut oil. Pour in the batter and smooth the top.

Step 3 shows combining the wet ingredients and the dry to make the cake batter, and step 4 shows pouring it into a loaf pan.

Step 5: Bake at 350ºF (175ºC) for about 40–45 minutes. The center may sink slightly as it cools; this keeps the loaf moist.

Step 6: For the topping, whip the mascarpone in a mixing bowl until light and fluffy. Gradually drizzle in the melted white chocolate while continuing to whip for 2–3 minutes until the mixture thickens and becomes airy.

Step 7: Let the loaf cool completely, then spread the White Chocolate Mascarpone on top. Chill for about an hour to set the topping before slicing. Garnish with mini white chocolate chips, if you like.

Choosing Gluten Free Flours for Quick Breads

Almond and oat flours are my top picks for quick breads because they create a tender crumb and good flavor. Almond flour adds richness while oat flour gives a mild, pleasant texture.

Store-bought oat flour works well, but you can make your own by pulsing rolled oats in a blender until fine. Arrowroot flour is a light starch that helps bind gluten-free batters; tapioca flour or cornstarch are acceptable substitutes if needed.

Make Your Perfect Gluten Free Gingerbread Loaf

  • Gluten free: If you need a certified gluten-free loaf, use certified gluten-free oats. Almond flour is naturally gluten free.
  • Make ahead: The loaf freezes well. Freeze whole or in slices; thaw in the refrigerator before serving.
  • Dairy free: The loaf itself is dairy free, but the mascarpone topping is not. Swap in a dairy-free cream cheese and sweeten with maple syrup, or use a simple glaze or serve the loaf plain.
