French Tacos bring together familiar elements: a large flour tortilla, protein, baked French fries, caramelized onions and a creamy cheese sauce. They’re easy to customize and quick to assemble.

Protein: Ground beef is classic and my favorite, but shredded pork, cooked chicken, sausage or even sliced chicken nuggets work well.

Follow package directions for the frozen fries; you’ll use about half of a 32-ounce bag. While they bake (about 20–25 minutes), prepare the fillings and cheese sauce.

Step 1: Heat 1 tablespoon olive oil in a medium (3–4 quart) saucepan over medium-high heat. Add 1 diced sweet onion and cook about 10 minutes until softened and beginning to caramelize. Remove and set aside.

Step 2: In the same pan, add 1 pound ground beef and season with garlic salt and pepper. Cook until fully browned, drain on paper towels and set aside.

Step 3: Wipe the pan, return it to medium heat and add 2 tablespoons butter. When melted, whisk in 2 tablespoons flour and cook about 1 minute. Gradually add 1 cup milk, stirring until the mixture thickens. Remove from heat and stir in 1/2 cup grated Gruyère (or cheddar), 1 teaspoon chopped fresh dill and 1 teaspoon salt. Whisk until smooth.

Step 4: Lay a large flour tortilla on a cutting board. Spread a scoop of cheese sauce in the center, then add about 1/2 cup cooked ground beef, 1/4 cup caramelized onions and 5–6 baked French fries. Spoon about 1 tablespoon French Fry Sauce or your favorite condiment over the top. Add more cheese sauce if desired.

Step 5: Fold the sides of the tortilla toward the center, then fold the top and bottom over to form a compact square package.

Instructions

  • Place the folded taco on the hot griddle or skillet and cook until the tortilla is golden brown on both sides and the filling is hot, about 4 minutes per side. Adjust heat as needed.
