This pie is a great final course for holiday meals. The spiced pumpkin filling is gently sweetened with brown sugar and balanced with a hint of molasses. It’s gluten-free, soy-free, egg-free, and dairy-free so guests with common allergies can enjoy dessert. The pie can be made up to two days ahead; if you prepare it the same day it will be served, allow at least three hours of chilling time in the refrigerator for the filling to set.

Ingredients

Crust Ingredients:

  • 1 cup Maskal Ivory Teff Flour or brown teff flour
  • 1/4 cup coconut oil
  • 2 tablespoons brown sugar or coconut sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup minced pecans
  • 1/4 cup water

Filling Ingredients:

  • 1 15 ounce (425 g) can pureed pumpkin (or about 1 1/2 cups homemade pumpkin)
  • 3/4 cup unsweetened nondairy milk
  • 1/2 cup brown sugar or coconut sugar
  • 3 tablespoons organic cornstarch
  • 1 tablespoon molasses
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cloves

Instructions

  • Preheat the oven to 350°F (175°C) and lightly oil a 9-inch pie pan.

Make the crust

  • Combine the teff flour, coconut oil, brown sugar, cinnamon, and salt in a food processor. Pulse until the mixture resembles coarse cornmeal.
  • Add the minced pecans and the water, pulsing until the dough forms a ball. Wrap the dough and chill it in the refrigerator for about 20 minutes.
  • Lightly dust a work surface with teff or another gluten-free flour, shape the chilled dough into a disk, then transfer it to the prepared pie pan. Press the dough evenly up the sides and flute or decorate the edges with a fork or your fingers.
  • Bake the crust for 5 minutes, then remove it from the oven and allow it to cool slightly before adding the filling.

Make the filling

  • In a blender, combine the pumpkin, nondairy milk, brown sugar, cornstarch, molasses, cinnamon, allspice, ginger, nutmeg, salt, and cloves. Blend until completely smooth.
  • Place the prepared pie pan on a rimmed baking sheet—this helps keep the oven clean and makes it easier to handle the hot pie.
  • Pour the filling into the prebaked crust and spread it evenly with a spatula. Bake the pie for 40 minutes, or until the filling is set around the edges and slightly jiggly in the center.
  • Allow the pie to cool until the pan is cool enough to handle, then refrigerate it for at least 3 hours to let the filling fully set before slicing and serving.
