the coffee starts to curl down into the milk

Sometimes jumping on a food trend is worth it — this one truly is. A recent social media wave showcased people whisking instant coffee, sugar, and water into billows of silky, caramel-colored foam that sits atop milk to make an indulgent frappé or latté. The transformation from basic ingredients into a cloud-like foam is surprisingly simple: surfactants in instant coffee trap air and, combined with the syrupy texture of sugar, create a stable, creamy foam. Instant coffee works best for easy, reliable results.

The name “dalgona coffee” caught on in South Korea after a celebrity likened the foam’s flavor to the honeycomb toffee candy called dalgona. Whipped coffee itself has a longer history and appears around the world under different names — beaten coffee in South Asia, frappe in Greece, and similar variations elsewhere.

With many cafes closed or limited, dalgona coffee is an ideal way to treat yourself at home. It whips up faster than brewing a pot of drip coffee and creates a decadent drink to sip slowly — or to slurp down in seconds if you can’t resist.

Can I use decaf or other types of coffee for whipped coffee?

Yes. Decaffeinated instant coffee whips up just as well as regular instant. Instant espresso also works nicely. Different brands may produce slightly different textures and whipping times; for example, Nescafe Gold Dark Roast performs well for many people. You can mix regular and decaf to lower your caffeine intake. It’s possible to reduce brewed coffee into a syrup and whip that, but it is time-consuming and can taste bitter if overcooked.

Can I change the amount or type of sugar?

Granulated white sugar is the most commonly used sweetener, though organic evaporated cane sugar works well too. The most stable foam forms with a 1:1:1 ratio of coffee:sugar:water (1 tablespoon each). Reducing sugar to 2 teaspoons still produces a fairly stable foam, but dropping below about 1½ teaspoons causes the foam to deflate more quickly. Coconut sugar performed well when used at the full tablespoon, giving a slightly less sweet but tasty result. Non-caloric sweeteners like erythritol/stevia can produce a softer foam but still enjoyable.

Can I make a healthier or non-coffee version?

Yes. You can use herbal instant coffee substitutes such as Dandy Blend (dandelion root) to create a caffeine-free whipped drink. These alternatives sometimes require larger quantities (try 2 tablespoons of coffee substitute, sugar, and water) and longer whipping times, so an electric mixer is helpful. Dandy Blend variants whip into a creamy foam that pairs well with non-dairy milks; coconut sugar may take longer to incorporate, so regular sugar is often faster. Note that some substitutes and low-calorie sweeteners produce a foam that doesn’t store as long in the refrigerator.

How long does whipping take?

Whipping time varies by brand and batch of instant coffee. Many people can achieve a thick foam with about one minute of vigorous hand whisking. Some brands take longer — up to several minutes — and some people prefer to use an electric mixer or immersion blender for larger batches or stubborn substitutes. For small amounts, a hand whisk is usually fast and effective.

Can I make it ahead and store it?

Yes. You can store whipped dalgona foam in a sealed container in the refrigerator for 3–4 days. The foam is most stable when made with the full amount of sugar; if it loses volume, a quick re-whisk refreshes it. You can also freeze portions of the foam — it remains soft enough to scoop when frozen and thaws quickly on a glass of milk.

How easy is it to make?

Very easy. The standard ratio is 1:1:1 — one part instant coffee, one part sugar, one part hot water. Combine the instant coffee and sugar in a bowl, add hot water, and whisk vigorously until the mixture lightens to a honey-golden color and becomes thick and glossy, similar to whipped cream or meringue. For larger batches, use an electric mixer.

Whisk for 30 seconds to a minute until foamy, then give it another 30 seconds for a stable, glossy peak. Spoon the foam onto hot or cold milk and enjoy. The foam creates a rich layer that slowly dissolves into the milk as you drink, giving intense coffee swirls with each sip.

Don’t dismiss instant coffee — in this whipped form it becomes a luxurious treat. Make a double batch if you want more than one cup; the foam keeps well and can be re-whisked if needed.

Kitchen Notes: Scale up as desired and use an electric mixer for multiple servings. Foam made with full sugar stores best; varieties with less sugar, sugar substitutes, or some coffee alternatives may not remain as stable when refrigerated.

Whipped Coffee Recipe (Dalgona Coffee)

  • 1 tablespoon instant coffee — regular, decaf, or instant espresso (or a coffee substitute)
  • 1 tablespoon sugar (or reduce to 2 teaspoons); use 1 tablespoon coconut sugar if preferred
  • 1 tablespoon hot water (just boiled)
  • 1 mug milk — dairy or non-dairy, hot or cold with ice
  • Optional: a pinch of cinnamon or cardamom, or 1/4 teaspoon vanilla extract

Place the instant coffee and sugar in a mixing bowl. Add the hot water and immediately begin whisking, scraping the bowl sides to combine. Whisk vigorously until the mixture lightens in color and forms a thick, caramel-colored foam with soft peaks. That usually takes under a minute but can be longer with some brands. Whip an extra 20–30 seconds for a glossy, stable foam. For larger batches or substitutes that take longer, use an electric mixer.

If adding spices or vanilla, fold them in and whisk briefly. Fill a glass with ice and milk for an iced version, or heat the milk for a hot latté. Spoon or scoop the whipped coffee onto the milk in a generous layer. Sprinkle with cinnamon or cocoa if desired. Serve with a spoon or straw and stir some foam into the milk as you sip for rich coffee swirls.

Makes one serving.
