These garlic roasted potatoes are simple, flavorful, and reliably delicious. With just a few minutes of prep and a handful of ingredients, they make an ideal side for a Sunday roast, ham, steaks, or pork tenderloin. Red potatoes or Yukon Golds work best here because they roast evenly and crisp nicely. Follow along for an easy method that yields golden, garlicky potatoes every time.

Easy Roasted Potatoes

This recipe is one of my go-to side dishes because it comes together quickly and tastes great. Prep takes only a few minutes and baking is about 30–45 minutes depending on oven temperature and pan type.

I prefer red or Yukon Gold potatoes for roasting since they crisp up nicely compared to russets and are easy to cube into bite-sized pieces. The seasoning is straightforward: fresh garlic, good-quality olive oil, parsley (fresh or dried), salt, and pepper. Toss everything together, spread the potatoes in a single layer, and roast until golden and crisp.

Fresh Garlic Is Best

For the brightest, most pronounced flavor, use fresh garlic. Fresh minced garlic brings a bold, aromatic note that shredded or powdered garlic often lacks after roasting. You can mince garlic yourself from fresh cloves or use refrigerated minced garlic from the store; either works well.

Avoid relying on garlic powder or garlic salt for this recipe if you want that vibrant garlicky taste to come through. Fresh garlic stands up to the oven’s heat and gives the potatoes the flavor they deserve.

How Long to Roast Potatoes

For golden, crispy potatoes, roast at 375°F for 30–45 minutes, turning the potatoes a couple of times to promote even browning. If you prefer a quicker method, use a baking sheet instead of a glass dish and increase the oven to 400°F. Spread the potatoes so they have room on the pan, bake for about 20–22 minutes, and flip once halfway through.

Watch for a deep golden color and crisp edges. Cooking time will vary with potato size and oven performance, so check for doneness by piercing a piece with a fork; it should be tender inside with a crisp exterior.

Ingredients

  • 3 pounds small red or gold potatoes

Instructions

  1. Preheat the oven to 375°F (190°C).
