Ingredients
- 1 6-ounce package seasoned long grain and wild rice
- 4 boneless chicken breasts, cut into bite-size pieces
- 2 cups Monterey Jack cheese, grated
- 1 can condensed cream of chicken soup
- 1/4 cup chicken broth or water
- Paprika, to taste
- 3 cups herb-seasoned stuffing mix
- 1/2 cup butter, melted
Instructions
- Preheat the oven to 325°F (165°C) when ready to bake.
- Cook the seasoned long grain and wild rice according to package directions. Spread the cooked rice evenly in a greased 9×13-inch casserole dish.
- Top the rice with 1 cup of the grated cheese. Arrange the uncooked chicken pieces over the cheese in a single layer. Sprinkle the chicken lightly with paprika, then add the remaining 1 cup of grated cheese over the top.
- In a small bowl, combine the condensed cream of chicken soup with the chicken broth or water until smooth. Spoon the soup mixture evenly over the layered cheese and chicken so the casserole stays moist.
- In another bowl, mix the melted butter into the stuffing mix until the crumbs are evenly moistened. Spread the buttered stuffing over the top of the casserole to create a crunchy layer.
- You may refrigerate the assembled casserole overnight or bake it immediately. If refrigerated, allow a short time to come closer to room temperature before baking.
- Bake at 325°F for about 60 minutes, or until the chicken is cooked through and the stuffing is golden. If baking from frozen, thaw in the refrigerator the day before and then bake as directed.

Freezing instructions: For the whole recipe, use a disposable pan or line your dish with foil, grease, and assemble as directed. Freeze until solid, then lift the assembly from the pan, wrap tightly, and store in a freezer-safe container. To make smaller portions, divide the ingredients and assemble in two 8×8-inch pans; freeze one for later. Thaw in the refrigerator the day before baking, then cook as directed.
