Steamed clams are one of my favorite summer treats. This version takes the simple pleasure of steamed clams and elevates it with butter, garlic, fresh herbs, a splash of cream, and beer for depth. Serve with crunchy grilled or toasted bread to sop up the flavorful broth — it’s a crowd-pleasing appetizer or light meal that’s both comforting and bright.

The sauce in this recipe is silky without being heavy. A modest amount of cream rounds the flavors and gives a chowder-like feeling without thickening into a stew. The beer adds a subtle malt and hop note that complements the shellfish and garlic, while a pinch of cayenne brings a gentle heat. It’s easy to prepare and works beautifully on a grill or on the stovetop.

Prepping Clams
There are many varieties of clams available, including littleneck, cherrystone, steamer, chowder, and Manila clams. For this recipe I prefer clams without a protruding neck — they are easier to handle and usually require less trimming.
Clean the clams by soaking them in cool, fresh water for about 30 minutes. Soaking encourages the clams to expel sand and grit, improving both texture and flavor. After soaking, give them a final rinse. Discard any clam that does not close when tapped or that remains slightly open after a gentle tap; these are likely dead and should not be eaten.
If you’re short on time, at minimum rinse the clams well under cold running water and discard any that do not respond to a gentle tap by closing.
How to Steam Clams
Steaming clams is straightforward: simmer them in a covered pan with your chosen liquid or sauce until the shells open, usually 5–10 minutes. A wide, deep skillet or a large saucepan with a tight-fitting lid works best. If cooking on a grill, use a heat-safe skillet and keep the grill lid closed to trap steam and speed the cooking. The clams are done when most shells have opened — discard any that remain stubbornly closed after cooking.
What Beer Should I Use?
Choose a beer that complements the dish without overpowering it. Blonde ales, wheat beers, or pale ales are excellent choices; they add subtle malt and citrus notes. If you prefer hoppier flavors, a New England-style IPA can introduce juicy, fruity dimensions. The beer’s presence is meant to be gentle, enhancing the sauce rather than dominating it. If you only have a light lager on hand, it will still work.

Creamy Beer Steamed Clams with Grilled Bread Recipe

Ingredients
- 2–3 pounds littleneck clams
- 2 cups ale or pale ale
- 1/2 yellow onion, chopped
- 1/3 cup cream
- 2 tablespoons butter
- 1 lemon, juiced
- 2 tablespoons fresh parsley, minced
- 2 cloves garlic, minced
- 1 teaspoon cayenne pepper
- Grilled slices of French or Italian bread, oiled or buttered
Instructions
- Soak the clams in cool fresh water for about 30 minutes to encourage them to expel sand and grit. Rinse well. Discard any clams that do not close when tapped or remain open after a gentle tap.
- Preheat a grill to medium-high heat and place a heat-safe skillet on the grill to warm, or warm a large covered saucepan on the stovetop.
- When the skillet is warm, melt the butter and add the chopped onion. Cook for 3–4 minutes until the onion softens. Add the beer, garlic, lemon juice, and cayenne, then bring the mixture to a simmer.
- Add the clams to the simmering liquid, cover, and steam until the shells open, about 7–10 minutes. Stir once or twice during cooking to ensure even heat. Discard any clams that remain closed after cooking.
- While the clams steam, brush bread slices with olive oil or butter and grill 1–2 minutes per side until golden and crisp.
- When the clams are done, remove the skillet from the heat (it will be hot), stir in the cream and minced parsley, and taste for seasoning. Serve immediately with the grilled bread for dipping.
Notes
You can also prepare this recipe on the stovetop using a large covered saucepan; it’s slightly faster indoors. The grill adds a pleasant smoky char to the bread and makes the experience feel like a summer gathering.
