Ingredients
- ¾ cup (100g) chopped pitted dates
- ⅔ cup (160ml) water
- 4 tablespoons (56g) unsalted butter
- ½ cup (110g) packed light brown sugar
- 1 teaspoon (5ml) pure vanilla extract
- 1 large egg, at room temperature
- ¾ cup (105g) all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ½ teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
Instructions
- Combine the chopped dates and water in a medium saucepan over medium-high heat and bring to a boil. Reduce the heat, cover, and simmer for about 10 minutes, until the dates are very soft. Mash the mixture until the dates absorb most of the liquid and the texture resembles applesauce. Set aside to cool slightly for at least 10 minutes so the mixture remains warm but not hot.
- Preheat the oven to 350°F (175°C). Line an 8×4-inch loaf pan with parchment paper.
- In a mixer bowl fitted with the paddle attachment (or using an electric hand mixer), beat the butter with the brown sugar and vanilla for 2–3 minutes on medium-high speed until pale and fluffy. Add the egg and beat until well combined; continue beating on high briefly to smooth the batter. It may appear slightly curdled at points but will come together once the dry ingredients are added.
- Whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a medium bowl. Gradually add the dry ingredients to the wet mixture while mixing on low speed until just combined. Fold in the warm date mixture with a spatula until evenly incorporated and smooth.
- Spread the batter into the prepared loaf pan and bake for 30–35 minutes, or until a skewer inserted into the center comes out clean. Transfer the pan to a wire rack and allow the loaf to cool before slicing.
Notes: For a variation, stir in ¼ to ½ cup of chopped walnuts, pecans, or chocolate chips before baking. Serve slices with salted butter, nut butter, a drizzle of honey, or a spoonful of caramel sauce for added indulgence.
