Ingredients
- 3 bottles of red wine
- 6 large short ribs (approximately 2 kg / 4–5 lb)
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tbsp olive oil
- 1 cup chopped leeks
- 1 cup chopped carrots
- 1 cup shallots
- 3 sticks celery, chopped
- 8 cloves garlic
- 2 tsp thyme
- 2 bay leaves
- 1 (14 oz) can chopped tomatoes
- 10 cups beef broth
Instructions
Day 1
- Pour the wine into a large, heavy-bottomed pot and bring to a boil over medium heat. Reduce the heat slightly and, if desired and comfortable, carefully flambé the wine by bringing a lit match close to the surface so the alcohol burns off. If you prefer not to flambé, simply simmer the wine until it reduces by half. Once reduced by half, remove from the heat and set aside.
- Season the short ribs with salt and pepper. Heat the olive oil in a large Dutch oven over medium heat. Sear the ribs on all sides until well browned. Transfer the ribs to a plate and set aside.
- Add the leeks, carrots, shallots, celery and garlic to the pot and cook for about 5 minutes until they develop color. Add thyme, bay leaves, chopped tomatoes, beef broth, the reduced wine, and return the short ribs to the pot.

Day 2
