Recently our youngest son and his wife visited for the weekend. They live only a few hours away, but between pandemic precautions and work schedules, months had passed since we last saw them. When they asked to come, I rearranged my schedule to make time—family visits are worth it, even when deadlines loom.
We didn’t have unlimited time together, but Sunday morning I wanted to send them off with a memorable breakfast. This Easy Weekend Breakfast Skillet was the perfect choice: warm, homey, and made to share.

The skillet isn’t complicated, but it does involve several steps. One pan doesn’t always mean one quick step—there’s browning, crisping, layering, and baking—but every step is straightforward. The result is worth the short effort: everything that would normally arrive as separate plates—hash browns, bacon, veggies, and eggs—comes together in a single dish you can bring to the table.
Because it bakes in the oven, you can step away from the stove and actually sit down with your guests instead of juggling individual plates. You can also do most of the prep ahead of time, refrigerate the pan, and finish it quickly when everyone is ready to eat.

Morning timing with guests can be awkward—people rise at different times, and you don’t always want to serve breakfast immediately. This skillet handles that perfectly. Prepare through the early steps the night before or earlier in the morning, then bake when everyone’s awake. Fifteen to twenty minutes in the oven and breakfast is ready to serve hot from the pan.


Flexible and Customizable
One of the best things about this skillet is how adaptable it is. You can make substitutions based on what you have or preferences at the table, which makes it ideal for using up leftovers or accommodating dietary needs.
If you don’t use bacon, swap in pork or turkey sausage, diced ham, or Canadian bacon. For a vegetarian version, omit the meat and add more vegetables or a plant-based protein. Vegetables are flexible too: if tomatoes and spinach aren’t your favorites, try onions, red or green peppers, artichoke hearts, baby kale, olives, or fresh basil. Use whatever combination of vegetables and herbs you enjoy.
Cheese is also interchangeable. In this version I used shredded cheddar, but parmesan, mozzarella, pepper jack, feta, chèvre, Colby, or burrata would all work nicely depending on the flavor profile you prefer.

Easy Weekend Breakfast Skillet

Ingredients
- 16 cherry tomatoes, halved
- 5 oz fresh baby spinach
- 1 tablespoon olive oil
- 8 slices bacon, chopped
- 12 oz frozen shredded hash browns (about half a large bag), do not thaw
- 8 large eggs
- 1 cup shredded cheddar cheese
- Salt and pepper, to taste
Instructions
- If you plan to cook and serve immediately, preheat the oven to 350°F (175°C). If you prefer to finish later, prepare through Step 4 and refrigerate the skillet until ready to bake.
- Heat a cast-iron or ovenproof skillet over medium-high. Add the cherry tomatoes, spinach, and olive oil. Cook 3–5 minutes until the spinach is wilted and the tomatoes are softened. Transfer the mixture to a bowl and set aside.
- In the same skillet, add the chopped bacon and cook over medium-high until crisp. Remove the bacon with a slotted spoon and drain on paper towels, leaving the rendered fat in the pan.
- Add the frozen hash browns to the skillet and spread them evenly. Fry in the bacon fat until browned and crisp, about 6–8 minutes. Resist turning them too soon; letting them cook undisturbed for 2–3 minutes helps achieve a crisp texture. Season with salt and pepper.
- Remove the skillet from the heat. Layer the cooked spinach and tomatoes and the crisp bacon over the hash browns. (If you are holding the skillet for later, cover and refrigerate now; add eggs about 15–20 minutes before baking.)
- In a medium bowl, crack the eggs and add a splash of water plus salt and pepper. Whisk until combined, then pour the egg mixture evenly over the skillet. Sprinkle the shredded cheese on top.
- Place the skillet on the lower rack of the preheated oven and bake 15–20 minutes, until the eggs are set and slightly puffed. Remove from the oven and let rest a few minutes before serving. Slice or scoop portions straight from the skillet and enjoy.
