Ingredients
- 2 pints fresh raspberries
- 1/2 cup granulated sugar
- juice of half a lemon
- 2 teaspoons gelatin
- 1/2 cup water
- 1 cup heavy cream
- shaved white chocolate for garnish
- additional raspberries for garnish

Place the raspberries, sugar, and lemon juice in a blender or food processor. Blend until completely smooth. Strain the raspberry purée into a bowl to remove the seeds, then discard the seeds and set the purée aside.

Sprinkle the gelatin over the water in a small saucepan. Warm over low heat, stirring gently, until the gelatin has fully dissolved, about 1 to 2 minutes. Stir the dissolved gelatin into the raspberry purée. Refrigerate until the mixture is cool and thickened, about 45 minutes to 1 hour.

Transfer the chilled raspberry gelatin mixture to the bowl of an electric mixer fitted with the whip attachment. Whip on high speed for about 2 minutes, or until fluffy. Spoon or pour into serving glasses and chill for at least 1 hour before serving. If preparing ahead, cover with plastic wrap before refrigerating.
