Ingredients

  • 400 g fresh curd
  • 2 tablespoon honey
  • For spices
  • ½ teaspoon dry crushed mint leaves
  • ½ teaspoon freshly roasted cumin powder
  • ½ teaspoon chili powder
  • ½ teaspoon black salt
  • For fruits
  • 1 apple, chopped (medium)
  • ½ cup pomegranate seeds
  • For dry fruits and nuts
  • 20 raisins
  • 4-5 dates, chopped
  • 7-8 cashew nuts
  • 6-7 walnuts
  • 6-7 almonds

Instructions

  • Preparation: Place the curd in a strainer and let it drain for about 15 minutes to remove excess water. Transfer the thickened curd to a mixing bowl.
  • Add honey to the thick curd and whisk until smooth and slightly creamy.
  • Chop dates and roughly chop the nuts. Reserve a few whole nuts, pomegranate seeds and raisins for garnishing.
  • Assembling the raita: In a clear serving bowl, layer the ingredients for an attractive presentation. Start with a layer of chopped fruits, then add a layer of mixed dry fruits and nuts.
  • Spoon a layer of the beaten curd over the fruits and nuts. Lightly sprinkle black salt, roasted cumin powder, chili powder and crushed dry mint leaves for flavor.
  • Repeat with another layer of fruits followed by dry fruits and nuts.
  • Finish with a final layer of beaten curd and top with reserved pomegranate seeds, raisins and whole nuts.
  • Sprinkle a little more black salt, roasted cumin powder, red chili powder and crushed dry mint on top to taste.
  • Serve chilled or at room temperature as a refreshing accompaniment.
