Blueberries add sweetness and nutrition to these pancakes

I’m always chasing the fluffiest pancakes possible. A diner stack can be irresistible, but it’s usually a treat rather than an everyday choice. These blueberry buttermilk pancakes are a healthier alternative that still delivers on texture and flavor. By adding flaxseed meal and fresh blueberries, the pancake batter gains fiber, omega-3s, and a bit of extra protein while still producing tender, fluffy cakes.

Be sure to use flaxseed meal rather than whole flaxseeds. Whole seeds remain intact and can be uncomfortably crunchy in the batter. Flaxseed meal blends into the batter, adding nutrition and a subtle nutty flavor without altering the texture. With the bright burst of blueberries, these pancakes become a satisfying, nutrient-dense breakfast.

Buttermilk contributes to the light, airy texture

Buttermilk plays an important role here. Its acidity reacts with the baking powder to create lift and tender crumb—resulting in pancakes that are light rather than dense. If you don’t have buttermilk, you can substitute whole milk or almond milk, but adding a spoonful of yogurt to the wet ingredients helps replicate the tang and acidity that encourage fluffiness.

Secrets to these blueberry buttermilk pancakes

There are a few simple tips to get the best results. First, don’t overcook the pancakes. Use medium heat and be patient—rushing them typically leads to burnt outsides and undercooked centers. A griddle heats evenly and makes it easier to cook multiple pancakes at once, but a large, heavy skillet works fine too. Watch for bubbles forming in the batter and slightly drying edges before flipping.

For more breakfast inspiration, try pairing these pancakes with fruit, yogurt, or a drizzle of maple syrup. They freeze well too—stack cooled pancakes with parchment between layers and store in a freezer bag for quick weekday mornings. Reheat in a toaster or oven until warm.

Equipment

  • Mixing bowls
  • Measuring cups
  • Measuring spoons
  • Griddle or large skillet

Ingredients

  • 1 Cup All purpose flour
  • ½ Cup Flaxseed meal
  • 3 ½ tsp Baking powder
  • ½ tsp Salt
  • 1 Tbsp Sugar
  • 1 tsp Cinnamon
  • 1 ½ Cup Buttermilk
  • 1 Egg
  • 3 Tbsp Coconut oil
  • ½ Cup Fresh blueberries

Instructions

  • In a bowl, whisk together the flour, flaxseed meal, baking powder, salt, cinnamon, and sugar. In a separate bowl, combine the buttermilk, egg, and coconut oil.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the blueberries carefully so the batter remains light.
  • Preheat a griddle or skillet over medium heat and grease with coconut oil or butter. Spoon batter onto the hot surface according to the pancake size you prefer. Cook about 4 minutes on the first side, until edges look set and bubbles form, then flip and cook another 3–4 minutes. Repeat until all batter is used.
  • Serve immediately with butter and syrup, or your favorite toppings.

Notes

  • Test griddle heat with a small amount of batter: if the edges set and bubbles form, the pan is ready.
  • To make dairy-free pancakes, use oat, soy, or almond milk and replace butter with vegetable oil.
  • For large batches, fully cook pancakes and keep them warm on a baking sheet in a 200°F (about 93°C) oven until serving.
