These Hawaiian Pork Sliders are easy, quick, and full of flavor. Mini pork burgers basted with barbecue sauce and topped with grilled pineapple make a delightful meal.

Ingredients 

  • 1 1/2 pounds ground pork
  • 1/2 cup minced scallions
  • 3/4 teaspoon ground ginger
  • salt and pepper
  • 8 rings pineapple
  • 1/2 cup barbecue sauce

For serving

  • mayonnaise
  • 8 King’s Hawaiian rolls

Instructions 

  1. In a large bowl, gently mix the ground pork, minced scallions, ground ginger, salt, and pepper until just combined. Avoid over-mixing. Shape into 8 equal patties and press a slight indentation in the center of each patty to keep them from bulging while cooking.
  2. Preheat the grill to medium-high and oil the grates. Place the pork patties on the hot grill and brush the tops lightly with barbecue sauce. Cover and grill for about 5 minutes.
  3. Flip the burgers, brush with more barbecue sauce, and place the pineapple rings on the grill beside them. Continue to cook the burgers for another 4–5 minutes, until they reach an internal temperature of 160°F (71°C).
  4. Grill the pineapple rings about 3 minutes on the first side to get good char marks, then flip and cook 1–2 minutes more. Remove the pineapple and patties from the grill and let rest for 5 minutes.
  5. While the meat rests, toast the slider rolls on the grill for 1–2 minutes until the edges are lightly browned.
  6. Spread a bit more barbecue sauce and mayonnaise on the rolls if desired. Assemble each slider with a pork patty and a grilled pineapple ring, then serve immediately.
