Packed with wholesome ingredients, these vegan energy bars make a perfect pick-me-up when you need a boost. With nuts, seeds, oats, banana, beetroot and berries, their chewy texture and natural sweetness will keep you going until dinnertime.

We all need an energy boost now and then—after a long gym session, a busy day with children, or when everything feels like harder work than usual. These pretty pink vegan energy bars are simple to make and ideal for those moments.

📝 What you need

Ingredients

  • Beetroot (cooked and peeled)
  • Bananas
  • Mixed berries (blackcurrants, blueberries, redcurrants — fresh or frozen)
  • Oats
  • Plant milk (oat, soya or nut)
  • Maple syrup
  • Nuts (almonds and hazelnuts suggested)
  • Seeds (linseeds, pumpkin and sunflower seeds suggested)

Equipment

Blender or food processor — for blitzing and chopping the ingredients. A compact food processor works well for these quantities.

Baking tin — a 20cm square loose-based tin or something of similar size is ideal for easy removal once baked. Line it with greaseproof paper for best results.

❄️ Freezing and Storing

These bars contain moist, fresh ingredients, so they don’t keep for long at room temperature. I recommend storing 2–3 bars in the fridge for immediate use and freezing the rest in an airtight container.

Remove from the freezer a day before you need them and allow to defrost in the fridge for easy snacking over the next day or two.

Vegan Energy Bars

Vegan Energy Bars with beetroot & berries

Packed with nutritious ingredients, these energy bars are chewy, naturally sweet and great for snacks on the go.

Ingredients

Bottom Layer:

  • 1 large cooked and peeled beetroot
  • 2 bananas
  • 175 g oats
  • 3 tablespoons maple syrup
  • 100 g nuts (mix of almonds and hazelnuts)

Top Layer:

  • 70 g nuts, roughly chopped
  • 70 g mixed berries (fresh or frozen)
  • 45 g oats
  • 50 g seeds (linseeds, pumpkin, sunflower)
  • 1 tablespoon maple syrup
  • 3 tablespoons plant milk (oat, soya or nut)

Instructions

  1. Preheat the oven to 180°C / 350°F / Gas Mark 4.
  2. Make the bottom layer: blitz the bananas in a blender or food processor to a smooth purée and transfer to a bowl.
  3. Blitz the cooked beetroot and add it to the banana purée, mixing until combined.
  4. Pulse the oats and then the nuts in the food processor so they are finely chopped; add both to the bowl.
  5. Stir in 3 tablespoons of maple syrup until the mixture holds together.
  6. Line a 20cm x 20cm (approx.) baking tin with greaseproof paper and press the mixture evenly into the base. Bake for 10–12 minutes, then remove and set aside.
  7. Prepare the top layer: roughly chop the nuts by hand so they remain chunky. Combine the chopped nuts with the berries, 45 g oats and seeds in a bowl.
  8. Add 1 tablespoon maple syrup and 3 tablespoons plant milk to the top-layer mix and stir well to combine. Spread this layer evenly over the pre-baked bottom layer.
  9. Return the tin to the oven and bake for a further 12–15 minutes until the top starts to turn golden brown.
  10. Remove from the oven and leave to cool in the tin. When cool, slice into 12 bars and enjoy.
