Easy Boursin Chicken Bake Recipe

Ingredients
- 1 lb. penne pasta cooked until al dente
- 3 chicken breasts butterflied
- 2 packages of original Boursin cheese
- 1 cup chopped baby spinach
- 1/4 cup chopped parsley divided
- 1 tbsp balsamic vinegar
- 1 tsp brown sugar
- 2 pints cherry tomatoes
- Salt and pepper to taste
- 1 cup freshly shredded mozzarella cheese
- 1/2 red onion diced
- 2 tbsp olive oil
Instructions

Preheat the oven to 400°F (200°C).

In a 9×11 baking dish, combine the cherry tomatoes, diced red onion, 1/8 cup chopped parsley, balsamic vinegar, brown sugar, olive oil, salt, and pepper. Toss gently to coat and set aside.

Butterfly and season the chicken breasts with salt and pepper. In a bowl, mix the two packages of Boursin cheese with the chopped baby spinach and another 1/8 cup of parsley until evenly combined.

Press the Boursin mixture over each butterflied chicken breast so they are well coated.

Place the prepared chicken on top of the tomato mixture in the baking dish. Sprinkle shredded mozzarella over the chicken and finish with cracked black pepper.

Bake for about 30 minutes, or until the chicken is cooked through, browned, and the cheese is bubbly and golden.

While the chicken bakes, toss the cooked penne with a little butter to coat and warm through.

When ready, let the bake rest a few minutes. Serve each chicken breast with a portion of buttered penne, spooning some of the roasted tomatoes and their juices over the pasta. Garnish with remaining chopped parsley and enjoy.
