My weekly menu plans are a collection of delicious dinner recipes, side dishes and a few desserts that will hopefully offer a little dinner inspiration, and help make your week a little smoother one recipe at a time.

Fall is definitely in the air here in Utah. Are you noticing the change where you live? I’m never quite ready for the cooler weather, but I always look forward to fall baking. Lately I’ve been busy in the kitchen, trying new recipes and revisiting favorites.
If you’ve been hunting for the Jell-O pumpkin spice pudding that’s been missing from shelves the last couple of years, check Winco — I found it there last week and bought ten boxes! Several of my recipes depend on that pudding mix, so I was thrilled to restock.
I use that pudding in recipes like these pumpkin chocolate chip pudding cookies, white chocolate chip pumpkin snickerdoodles, and this pumpkin éclair dessert. If you love that flavor too and have a Winco nearby, grab a few boxes. If not, I’m always willing to share.
