Bacon and Egg Salad – Crunchy

A bacon and egg salad doesn’t have to be dull. This crunchy version is as satisfying in flavor as it is attractive on the plate.
Crispy bacon adds texture and a rich, salty counterpoint to tender lettuce. When the eggs are cooked sunny-side-up the runny yolk doubles as a natural dressing — simply break it and toss to coat the leaves.
If you have room for a few extra carbs or want to treat yourself after a big workout, try adding mango, pine nuts and avocado for a fruity, nutty twist that complements the bacon and egg base.

Recipe
Crunchy Bacon and Egg Salad
Ingredients
- 2 Eggs
- 2 Slices Bacon (50g / 1.7 oz)
- Handful Lettuce Thinly sliced
- Handful Red cabbage Thinly sliced (optional)
Instructions

Cook the bacon in a pan for about 5–7 minutes, or until it reaches your preferred crispness.

Fry the eggs and keep them sunny-side-up so the yolks remain runny.

Thinly slice the lettuce and red cabbage. Arrange the greens on a plate or in a bowl, top with bacon and the fried eggs. If your eggs are fully set, a light drizzle of olive oil or your preferred dressing works well.
